Mouthwatering Madeline Cookies

which you can easily find at most kitchen stores or online. We really recommend getting your hands on a pan because part of the appeal of these cookies is their delicate seashell shape. However, if you’re unable to find a pan we recommend making them in a cupcake tin.

Here’s what you’ll need.

2 eggs


3/4 teaspoon vanilla extract


1/8 teaspoon salt


1/3 cup white sugar


1/2 cup all-purpose flour


1 tablespoon lemon zest


1/4 cup butter

1/3 cup granulated sugar for decoration


Preheat your oven to 375 degrees Fahrenheit or 190 degrees C. Butter and flour your Madeleine pan and place it in the fridge. This might sound odd but it’s important to do so in order for the butter and flour to harden. Make sure you’ve used melted butter on your pan.  It’s important that you butter and flour them because these cookies have a tendency to stick to the pan even if it’s non stick. Now, melt your butter and let cool to room temperature. In a small mixing bowl, beat your eggs, vanilla and salt together at high speed until light. Slowly add in the sugar and continue beating at a high speed until mixture is thick. It should take around 5 – 10 minutes. Next, sift your flour into the egg mixture in three batches. Make sure to gently fold after each addition. Add in your lemon zest and your pour melted butter around edge of batter. Gently fold the butter into the batter and spoon batter into molds. Bake for around 15 minutes but be sure to keep an eye on them while they’re baking to ensure that they don’t burn!
